Potato Soup 

Ingredients 

  • 5-6 medium sized potatoes,peeled and diced
  • 1 medium sized onion, diced
  • 1 bunch of carrots, celery, leeks, parsely
  • 15gms butter
  • 1 cup of milk
  • 500ml of chicken stock
  • Grated Cheese
Method 
  • Saute onions and all the soup vegetables in butter
  • Add the diced potatoes to it. 
  • Add the chicken stock to it and let it boil till all the vegetables are tender. 
  • With a masher or a fork, mash all the potatoes and add milk to it. 
  • Let it simmer for a good 45 mins. 
  • Add salt and pepper. 
  • Sprinkle cheese over it. 
Serve hot with bread sticks.
