Spinach & Moong Dal  

Ingredients 

  • 1 fresh bunch of Spinach 
  • 1 cup Moong Dal 
  • 1 medium sized tomato chopped
  • 2 pods of garlic, crushed
  • 1 piece of ginger, crushed
  • 1 tsp cumin seeds
  • 1 tsp aajwain seeds
  • 2 tsps red chilli powder 
  • 1/2 tsp turmeric powder
  • 2 tsps corriander powder
  • Juice of one lemon 
  • 2 tsps sugar
  • 2 tblsps Oil
  • Salt 
Method 
  • Wash the Moong Dal well and pressure cook. 
  • Take Oil in a deep nonstick pan/pot. 
  • Add cumin seeds, aajwain seeds and let them splutter .
  • Add garlic and ginger 
  • Add tomatoes and saut for a couple of minutes till they are soft 
  • Add pressure cooked Moong Dal alongwith the water which is used to pressure cook the dal. 
  • If the gravy is too thick,add some more water 
  • Add salt, sugar, red chilli powder, turmeric and corriander powder and let the gravy simmer till everything is mixed well 
  • Now add the chopped Spinach and mix well 
  • Add juice of lemon 
  • Cover the pan/pot and let the vegetable simmer for few minutes till the spinach is tender, stir occasionally
Serve hot with phulkas,rice and pickel.
